Okay here it is!!! First you have to make your favorite bread dough, and as you make them into buns you wrap the leafy green of the beets around it.I buy the WHOLE beet at the grocery store, I use the greens(if the leaf is big you can cut it in half), and discard the beet(DON"T tell my Mother In-Law)But you should boil the beet, and eat it. the Buns have the natural tendency to be long when wrapped with the leaf, and that's good. then you let them rise, and bake them.
Here is the good part: In a med size heavy pot you melt a very generous amount of butter and saute some onions. This is a non measured recipe so just go with it!! then(when the onions are soft) you add Whip Cream NOTHING LESS and be generous, this is the good part!!!! bring it to a boil for a few minutes, it will slightly thicken. ***It will boil over if not watched. ***
You take the Beet top bun... and generously pour the warm whip cream sauce over the bun, I like to cut into the bun up so the sauce really soaks into the bun... and ENJOY!!! Add salt & Pepper to taste, and fight your family off for the rest...
We sometimes serve it with a meat... but really all we want is the bun.

Anne, thanks so much for posting this, it looks so good! Now I'm going to see if any of our stores here carry whole beets....if not I am pillaging one of our neighbors gardens for them!
Mmmm, buns. Nice to know there's actually a real use for beets. I always thought they were some sort of punishment, lol!
Still not sure why you have to wrap the bun in a beet top??? Wouldn't the sauce be good just over top of normal buns- or does having the beet top wrapped around it make it more healthy? I think it's just an excuse that our dear foremothers thought up so they wouldn't waste anything!! Still... It looked like you had a fabulous time bonding with your mother in law!
